Why wood?

Well—wood provides a different type of heat than gas, it is a dryer heat —where gas has more moisture. Wood is renewable source of energy—and honestly its just a lot more fun to roast with wood. We roast at 7000 feet in the mountains of the Southwest where the air is dry and is optimal for coffee roasting.
